If you want to wash the chicken gut, first add salt and turmeric. Grind and rinse with plenty of water.

Then add bean powder, knead by hand and wash again.

The residue will be accompanied by green bean powder. Rinse four or five times with cold water.Finally, add it into warm water and add two tablespoons of vinegar and rinse immediately. If you soak it and wash it, it will cause acid to seep in.

Then rinse again with water and it will not have bad smell. When everything is clean, the washing water will be clear.

Cut into small pieces. Then add chicken powder, turmeric and condiment but no salt added. 

Then make a paste with chilli, onion, garlic, lemongrass and ginger.

You're ready to start!

When the cooking pan is hot, put the oil into the pan. When the oil boils, add the paste and bay-leaf. Add turmeric. 

When the color is nice and fragrant, add the chicken gut and stir. Do not add water.

When it smells good, add more water and cook until the chicken gut are soft. If you need, you can use salt or fish sauce. Once the oil has softened, it is ready to eat. It is very fragrant and spicy.
